  • HOLY. CRAP. I made this for my family for dinner tonight and it is hands down the best dish I have ever made, possibly best dish I've ever eaten in my life.     Hot tip: Keep the ginger in the freezer (it will never spoil!) and then grate in the frozen state. Much easier, super fine, perfect.
  • Ingredients: ● 1 tablespoon refined or virgin coconut oil, or a neutral-flavored oil ● 4 cloves garlic, minced ● 2 inch piece of fresh ginger, peeled and minced or grated ● 1 tablespoon minced fresh turmeric, or 1 teaspoon ground turmeric ● 1-2 serrano peppers, diced (adjust according to desired spice level) ● 1 teaspoon ground cumin ● 1/2 teaspoon ground coriander ● 1/2 teaspoon Indian red chili powder (if you only have regular chili powder, which is a blend, use 1 teaspoon) ● 2 teaspoons curry powder ● 1 teaspoon garam masala ● Kosher salt or sea salt to taste (I use about 1 tsp kosher salt, and add more at the end) ● Freshly cracked black pepper to taste ● 1 cup (180-190g) red lentils, or split red lentils (the split variety will cook a bit quicker) ● 2 cups (480 mL) low-sodium vegetable broth ● 1 (14-ounce / 400g) can crushed tomatoes (or half of a 28-ounce can) ● 1 (13.5-ounce/400 mL) can full-fat coconut milk ● 3 tablespoons unsweetened creamy almond butter ● 1/2 a small lemon, juiced ● 1/2 cup (~8g) fresh cilantro, roughly chopped ● For serving: Basmati or Jasmine rice and Indian flatbread such as roti, paratha, or naan
  • "curry smell" is literally the best smell ever. Lentil curry is my comfort food since the first time I tried it. can never get enough!
  • Tip from an Indian who cooks lentils every other day: soak your raw lentils overnight (or even for a couple of hours in warm water) before cooking, and reduce your time at the stove by 50%!
  • UPDATE: We made your Red Lentil Curry, EVERYONE ABSOLUTELY LOVED IT!! I even doubled the recipe and the next day I had it for dinner, again and here comes my kids, “What, you were going to eat that without us? I want a bowl.” And here they just got done eating their dinner!! The other best part, outside of how excellent it was, my 20 old son came down as I was about to start preparing and washed his hands and said, “Ok, put me to work”. After dinner he said, “Call me down anytime you’re making her recipes.” Girl, don’t ever change that recipe, it’s spot on! Used turmeric too😋

    The is the best vegan dish I’ve made so far! My husband repeatedly said, “This is so good. Thank you for making this!” Even my picky daughter was lured in and ate it up. I swapped a few items based on what I had in my pantry - paprika instead of chili powder, tahini instead of almond butter, and white balsamic vinegar instead of lemon juice - and it still turned out phenomenal. I can’t wait to recreate this using all of the original ingredients! Thank you for helping to make vegan dishes that are gobbled up by all!

    Grated ginger hack: Buy a large batch of fresh ginger. Peel and chop into pieces. Throw into a Vitamix and add just enough water to make a thick paste. Put into an ice cube tray and freeze.Pop out and store in a freezer bag. Each cube is a potent 1Tbsp of grated ginger.

    Couldn’t sleep, so I decided to make this six in the morning. It was incredibly delicious! I also made the garlic nan bread and it was amazing. My family had this for breakfast haha

    I'm a year late but this recipe is legit. I used substitutes for some of the ingredients and this curry still bangs (tastes delicious). Definitely in my cooking repertoire now.

    My gf made this for me and it is the most complex and delicious dish I have ever tasted and that she has ever made. We have made vegan currys before and let me tell you, not one pot has ever been licked clean like this one has. We ate every last bit of this and I think it lasted 3 meals for us!! Tonight it is my turn to make it ☺️

    Ugh. I hate that kids are so dang mean sometimes. I can’t believe people teased you because your house “smelled like curry”. My neighbors were best friends with me and my brother growing up. They were Indian via the UK. I STILL remember how good that house always smelled to me. I remember their mom wearing lots of jewelry and jingling when she walked and listening to her sing along to the Beatles while she cooked. Such a bright happy home and family. They used to serve a dish just like this often. Great memories associated with this dish but I’ve never tried to make it myself. Didn’t think it would be this simple!

    I've never liked cooking and whenever I try a recipe it always fails. But I gave this a try and it was unbelievable! I was so shocked how amazing this turned out. My leftovers are already gone after 2 days and I need to make more!
  • I made this for the family a few weekends ago. My husband is a carnivore. His idea of vegetables is frozen corn. Well he tried it just because my kids made him. He LOVED it.   • I can't believe I even made this! I had indian food like twice in my life, in my country it's not much popular, because we use less spices and less chilli and ginger, so for me is Indian food like a fire in my mouth. But I tried to be careful with the spices in this recipe and I love it so much! It's the best Indian and the best vegan food I ever had. And still can't believe I made it. Thank you so much for sharing these recipes, I'm starting realizing being vegan is not impossible for me.
