    In Iraq, we cook the chickpeas(hummus) with baking soda for tenderness, we also start the food processor then add the ingredients while the processor is working, a quick tip to make the hummus more creamy is to add ice cubes to the processor at the end it’ll make it fluffy and creamy :)

    My cousin's Lebanese husband likes his hummus extra lemony. In a pinch, if you don't have tahini, you can sub out peanut butter, just add a little vinegar as tahini is sharper flavored than peanut butter.

    Made the hummus today…yummm! Offered to sis who said “ I don’t like hummus, don’t have any hurt feelings if I don’t eat it”. Well she went back for thirds! I think the creamy texture was the difference.
  • I buy chickpeas in a 1 kg bag, soak them for 24 hours, changing the water 2-3 times. After a day, I cook the chickpeas for an hour. I put them in freezer bags, ready for hummus, falafel or soups. I never buy chickpeas in a tin anymore. Just a pro-tip from an amateur. 😅

    I love homemade hummus made from dried chick peas and then zhuzhed up with chipotle in adobo. Your recipe is close to the one I used - which was without cumin or added water but had added fresh parsley and pine nuts. Thanks for this channel!
  • Genius idea to boil the chickpeas to remove the skins!! I always rinse and put on paper towels and have to pick all those little skins off what a pain that is! Thank you for this information and for the delicious recipe, I will be making this hummus soon!! This was a great video!

    if you want to cook chickpeas: put them into water over night and the next day you cook them for 45 minutes to one hour.
