Beef cheeks are the most succulent slow cooking cut of beef. It's way better than chuck, and even better than short ribs / brisket.
If you don't want to try a brisket due to size / money. try beef cheeks 1st. You won't regret it!

No need to use wagyu tallow either, You can just simply use beef fat / dripping / lard etc. I used the wagyu because a good friend sent me some tubs over from the USA.

    Looks great. Thinking you could get the same result by add Ghee with the cheeks wrapped in foil. Would take less tallow/lard product to. Will try.

    I've cooked a lot of brisket, but our options in the UK are really limited. Some grass fed stuff is OK, but you are paying way over the odds. Whereas you can pickup decent short rib in the supermarket and cheeks at the butchers. 9/10 it's coming out better than the brisket with half as much work. Cheeks are awesome, cook them.

  • What coal are you using mate? Im a webber man ,, briquettes and lump wood,, many briquettes because they generate such a controllable heat!?👍
