  • Everyone can learn from Carleigh - whether they follow a vegan, vegetarian, Whole 30, paleo or more traditional diet!! We can all benefit from eating more plants! My husband and I now challenge ourselves to eat 30 or more different plants a week! So proud of this wonderful Canadian!! Both of her cookbooks are outstanding!

    I was just thinking about anyone following Carleigh might want to add following a gardener on Youtube (KimCali) who did this practical experiment that, I believe, started her whole channel. She has a nice backyard for growing vegetables, but she measured out a section on her deck that approximates the average size of a lot of people's deck or apartment outdoor space and experimented with just how much she/we could grow of various vegetables (and it is a LOT.) If I had know all of this info when I was younger, it would have saved me tons of money. And this, just from following Carleigh and then this practical gardener. I'm 63 now and still learn so much!
