PICKILIZ
a Hatian condiment that consist of cabbage, carrots and scotch bonnet pepper pickled in vinegar and my include green peppers (bell pepper) along with pimento to add flavor. It is similar to escovitch which was brought to Jamaica by the Spanish and served with fried seafoods and other fried foods.

GRIOT
Fried pork usually the pork shoulder is another popular Hatian dish that is seasoned, braised then fried.

FRIED FISH
The fish is lightly seasoned and has an taste of garlic with slight salt and black pepper.

    The first time I had fried goat was at a Haitian restaurant in Brooklyn. It was seasoned well but because it was fried so dry the meat was too tough for me to eat. I love their Crema rum punch!

    Food Boss glad you took us along with you on the plane ride! I can imagine it was a beautiful ride over...Pickliz! My neighbour is from Haiti and there is also another friend of mine who also is from Haiti and both make different styles of Pickliz! They use sour orange and soak it with their own spices and use our beloved scotch bonnet pepper! I love it very much and have tried to copy it myself! Enjoy the Bahamas! Infinite Blessings......The energy is AWESOME!

    You should go to Governors Harbor, George Town, Harbor Island, Bimini, Marsh Harbor, Treasure Cay, they have so many outer Islands, Bahamian are nice people

  • Boss, the pikliz is seasoned with sour orange. The citrus flavor (acidity) does the same as the vinegar would, with a different flavor. Pickling effect as vinegar, pikliz a great condiment. Delicious. Takes skill to fry that fish fry and still maintain moisture and seasoned perfection. Whole lot more to caribbean crusine than just Jamaican. And we should embrace them all. Glad you enjoyed it.
