TAHINI

Ingredients:
150 gr (5,3 oz, 1 cup) raw sesame seeds
3 tablespoons hazelnut oil

Directions:
• Warm 150 gr raw sesame seeds in a large steel pan. Just warming every sesame seed will be enough for making tahini. Don’t roast them until all of it turns to brown. Using a steel pan is important as it has no coating, not releasing harmful gases at high temperatures. You can use a cast iron pan as well for browning.
• Add the sesame seeds in food processor while they are still hot.
• Pulse for about a minute and add 3 tablespoons of hazelnut oil. You can use grape seed oil or sunflower oil as well but prefer a seed oil then olive oil for this recipe.
• After working food processor for another 3 minutes your tahini will be ready to enjoy. First the texture is going to be sand-like. Don’t give up on that stage and continue. After enough patience your tahini is going to be creamy and dreamy.

TAHINI & MOLASSES

Ingredients:
1 tablespoon tahini
1 tablespoon molasses

Directions:
• Mix 1 tablespoon of tahini and grape molasses in a bowl.

TAHINI & COCOA SPREAD

Ingredients:
1 tablespoon tahini
2 tablespoons honey
1 heaping teaspoon cacao

Directions:
• Mix 1 tablespoon tahini, 2 tablespoons honey and 1 heaping teaspoon cacao. Your healthy cacao is ready. You can adjust the amounts to your taste.

HİBEŞ

Ingredients:
1 cup of tahini
2 lemons’ juice
½ cup of water
2 cloves of garlic
1 teaspoon ground cumin
1 teaspoon paprika

Directions:
• Squeeze 2 lemons and mix it with 1 cup of tahini. Add 1 teaspoon cumin and 1 teaspoon paprika.
• Puree 2 cloves of garlic and add to mixture. Hibeş is a great sauce for kebap or you can eat as a dip or mezze.
• For toppins you can sprinkle some paprika, cumin and fresh parsley leaves.

TAHINI SALAD DRESSING

Ingredients:
2 tablespoons tahini
1 lemon juice
5 tablespoons olive oil
2 tablespoons yogurt
Salt
Pepper

Directions:
• Mix 2 tablespoons tahini, 1 lemon juice, 5 tablespoons olive oil, 2 tablespoons yogurt in a jar or glass.
• Add salt and pepper to your taste, your tahini dressing is ready to enjoy.

GREEN TAHINI

Ingredients:
1 batch of coriander
100 ml water( 3,4 fl oz, 2/5 cup)
2 cloves of garlic
70 gr tahini (4-5 tablespoons)
½- 1 teaspoon salt
½ lemon juice

Directions:
• Add 1 batch of coriander, 100 ml of water and 2 cloves of garlic into food processor.
• Pulse until it becomes a puree, add 70 gr tahini, add salt to your taste and squeeze half lemon juice.
• Pulse again until mixture is blended well. Your green tahini will be great with köfte, or as a dip for chips. The other upside of this recipe is tahini is a great substitute for cheese if you are not eating diary or if you are a ve

  • We use unroasted sesame oil for cooking in some parts of India for our everyday cooking, so I tried tahini with it. It intensifies the taste of the sesame seed in the tahini. Just loved it. Also love your channel. You come across as a woman in love with food (like me!) and you communicate that with so much understanding and respect for your cuisine. Enjoy that.

    For those making and tasting tahini for the first time. I Just made mine following this recipe yesterday. I thought i did something wrong when the tahini remained a bit bitter even when it’s cooled. Turns out it is normal. The store bought version tasted similar. So believe in yourself and the recipe. You’re doing fine.

    Love from India Refika. In southern India, roasted sesame seed powder ( same taste profile as tahini) is used widely in dips or what we call chutneys. For example raw mango(naturally tart), sesame seed powder, green chillies ground and tempered with mustard curry leaves. Replace raw mango with any sauteed vegetable and add lemon or tamarind for tartness. We use this as a rice accompaniment
