Come spend some time in the kitchen with me, we are canning cole slaw, canning ground beef, and then wait until you see what I do with all that grease!

Canned Cole Slaw ⬇️⬇️
Ingredients:
1 bag of coleslaw mix OR fresh shredded cabbage, carrots etc (2 pounds)
If desired you can add bell pepper and/or onion - sliced thin
1 teaspoon salt
Mix the above ingredients and let it sit for 1 hour. Brine Ingredients: 1 cup white vinegar 1/4 cup water 2 cups sugar 1 teaspoon celery seeds 1 teaspoon mustard seeds Mix the brine ingredients in a pot and put on a medium heat. Stir until the sugar melts and everything is mixed together. Let cool. When the hour is up, rinse and drain the slaw mix. Fill your jars with slaw. (I added 1/16 tsp of Pickle Crisp to each jar.) Add even amounts of the brine to each jar. Fill to 1/2 inch headspace. Wipe the rims of the jars with a paper towel dipped in vinegar. Put on the flat/lid and the ring/band, tighten to finger tight. Make sure the water is at least 1 inch over the jars. Water bath for 10 minutes. Turn off the heat and let the canner sit for about 5 minutes. Remove the jars from the canner. Put them on a clean towel and allow them to cool completely. Label jars and store in your pantry. When ready to eat, drain and rinse the cole slaw, add your mayo and if desired sweet pickle cubes. Chill and serve.

Canned Ground Beef in Tomato Juice ⬇️⬇️
Brown the ground meat in the skillet in batches; transfer the browned meat to a bowl
Pack meat loosely into heated pint OR quart jars.
Leave 1 inch headspace.
Top jars up with liquid (water from a kettle, meat, stock, or tomato juice) maintaining 1 inch headspace.
Debubble; adjust headspace.
Wipe jar rims.
Put lids on.
Processing pressure: 10 lbs weighted gauge, 11 lbs dial gauge (adjust pressure for your altitude when over 1000 feet.)
Processing time: pint jars for 75 minutes OR quart jars for 90 minutes.

I’m so excited at the prospect for all the new recipes I can make now! My daughter asked why I would pay $15.00 for a used 1978-1979 Presto cooker?     Since learning that vegetable oil is one of the worst oils for your health, I've been using less processed , and therefore healthier oils for cooking. Thanks so much for educating us on the making of tallow. It is very expensive in the grocery stores so i shant have the need to buy it again.
