Mom makes us a wonderful and easy pineapple quick bread recipe. The bread is moist and full of flavor. Want to modify it, add some toasted coconut or pecans.

Pineapple Bread Recipe

3/4 cup sugar
1 stick softened butter
2 large eggs
1.5 cups all purpose flour
2 tsp baking powder
1/4 cup pineapple syrup ( syrup from can of crushed pineapple drained)
2 tbsp whole milk
1 cup of crushed pineapple (drained, save syrup)
1/8 tsp salt


Glaze
1 cup of powdered sugar
1 tsp vanilla
2 tbsp pineapple syrup ( left over from draining of crushed pineapple)

preheat oven to 350
butter 8 x 4 loaf pan, then coat lightly with sugar

beat softened butter and then add sugar, beat until fluffy.
Add Eggs and beat.
add milk and pineapple syrup.

In another bowl mix flour, baking powder, and salt. Mix.

Add dry ingredients to wet, mix.

Once mixed, add drained crushed pineapple and mix until pineapple is evenly distributed.

Pour mixture into buttered bread pan.

Bake @ 350 45-50 minutes. Let cool. Turn bread out of pan once cooled. Poke holes into top of bread.

In mixing bowl, combine the powdered sugar, vanilla, and pineapple syrup.

Once mixed slowly pour over the bread. Slice and Enjoy.

    I like the way you presented this recipe. No taking forever! I bet more people make this bread because they actually watched the video! Some recipe videos they do everything in slow motion and drag it out for 20 or so minutes! I’m going to make this.🙂

  • I make a cake like this by simply using a yellow butter cake mix and substitute a small can of crushed pineapple instead of water, quick and delicious. You may need to bake 5 to 7 minutes longer than the time given on the box
