GOAT animal? My first thought is the Horseshoe Crab. It is a living fossil (survived five mass extinctions), looks super cool, and has super anti-microbial blood. I was also thinking Tardigrade.

OK, so now I need your advice. On a holiday to Japan I realised that they don't seem to eat aged cheddar. I actually have made aged cheddar before and was thinking about trying to make aged cheddar in Japan from Hokkaido milk, but am concerned that there won't be a market for it. What do you guys think about this? Is there actually a market, or would I be relying on the tourist and expat market?
