  • GOAT animal? My first thought is the Horseshoe Crab. It is a living fossil (survived five mass extinctions), looks super cool, and has super anti-microbial blood. I was also thinking Tardigrade.

    OK, so now I need your advice. On a holiday to Japan I realised that they don't seem to eat aged cheddar. I actually have made aged cheddar before and was thinking about trying to make aged cheddar in Japan from Hokkaido milk, but am concerned that there won't be a market for it. What do you guys think about this? Is there actually a market, or would I be relying on the tourist and expat market?

    Sheep cheese do indeed exist, in Poland. It's made in the Tatra mountain region

    Yeah duck eggs seems to taste like it's missing something, especially if you try to poach or scramble it, chicken eggs is the full flavour.
