water gives a more severe quench over oil and IMHO gives a better result as it makes the striker very hard, to the point of brittleness. I have even heard of people using a brine quench which is even more severe than water for strikers. I like your striker, looks great. I too have found that you have to wear them down a bit, they tend to strike better when you do that.
