  • I have been seriously thinking about smoking my own ham hocks rather than buying them already smoked. I have never heard anyone say they smoked their own hocks; so, I thought I was crazy! Then I came across this video! Thank you!! I'm definately going to try this.

    Ham Hocks/Shank. I brine it for 24 hours, dry it out and score the rind. Rub with slt and let it sit overnight. brush off excess salt and put it, standing on it's end at 450 for 1 hour and reduce to 325 for one hour. The "crackling" is worth it. I'm fortunate to live in an hispanic neighborhood. If I'm patient, I can get great pork bellies, hocks and locally grown shoulder.
