I cook my bacon this way, but for a different reason. My husband doesn't like crispy bacon...he prefers it softer. I do this to cook it all the way through. Just cook the water down on high until it evaporates, then sear it to crisp up the edges. Works great!

I do mine in the oven, and it comes out perfect everytime.

I started doing this. Especially with making my own bacon and not liking thin strips. It also helps cook the bacon thoroughly meaning you can have it under crispy or just little a little crispy edges on it.
