Squash Dressing

Squash Dressing
2 cups cooked Yellow Squash
10-ounce package Frozen Seasoning Blend (chopped onion, celery, red and green bell pepper and parsley)
1 stick Butter (8 tablespoons)
1 Mexican Cornbread Mix (cooked according to package directions)
2 Eggs
10.5-ounce can Cream of Chicken Soup (undiluted)
Slice squash and cover with water in saucepan. Add 1-1/2 teaspoons Salt. (can use yellow crookneck and zucchini combined). Boil until tender. Drain in a colander, mash and measure 2 cups.
While squash is cooking bake the cornbread according to package directions. Cool and crumble. In a saucepan melt butter, add seasoning blend and sauté. Turn off heat and add the squash, cornbread, eggs and soup. Stir well to combine. Pour into a buttered baking casserole dish and bake at 350 degrees F for 20 - 25 minutes until firm. Freezes beautifully before cooking.

    I knew you were church of God, ever since I been watching your channel my spirit has connected with you and John. Listening to him pray he just has something deep down inside his soul, I feel the lord every time he prays. I am Pentecostal and grew up in church since I was born I am now 55 years old, and never have gotten tired of it, I am just working to make heaven my home someday. Been singing and playing piano for over 33 years. Wouldn’t take nothing for my journey now. I compare that old song to my time serving the lord. Got saved when I was 12 years old and started ministering when I was 19, and have saw many saved, baptized in the Holy Spirit and delivered and set free. You and John are such loving and giving people. You are my most favorite cooking channel to watch. I love your stories about the days of you growing up, and about your family.   • I love summer squash! Growing up, mama would pick squash blooms early morning (there is a way to tell male from female blooms) she would rinse then, let dry a bit and dip in cornmeal & fried them crispy….I made them a few times myself & they are so good…

    I am making a half recipe of this tonight for dinner. I had a half a pan of cornbread left and some squash I needed to use. Just waiting on the squash to finish cooking then I'll put it all together. Can't wait to taste it!
