It’s what happens when companies get cheap. Edit: when companies import products like fruits and vegetables (usually in mass quantities) some will not be ready to be sold, due to the inconsistency of buying in large amounts, and therefore having ripe and dry produce.

A rubbery avocado indicates that it is wilted and was harvested before it was ripe enough. As a result, it won't ripen properly, even with storage; it will just wilt and rot. This causes the texture to become rubbery and the taste to remain bitter.
