New Chinese restaurant opens in Vancouver's other Chinatown known as Little Chinatown in East Vancouver. The new restaurant is called Super Stars Restaurant which features popular Chinese dishes, dim sum favorites and even some western dishes like fish and chips.

The second half of my video features my restaurant quality Chinese recipe. Today we feature Prawn And Asparagus Stir Fry. It's a simple dish but uses some traditional ingredients like cloud ear mushrooms. Check it out and tell me what you think.

This stir fry has lots of wok hei. Wok hei is the seared flavor from stir fry in a carbon steel wok. The asparagus is tender but still crispy. The prawns are juicy and not overcooked. We add Chinese cloud ear mushrooms to this recipe., but you can use other kinds of mushrooms. This is a simple but delicious stir fry recipe that you will be proud to serve your family and friends.

Recipe is below:

PRAWN AND ASOPARAGUS STIR FRY

8 to 16 whole tiger prawns
2 to 3 cups asparagus chopped
1 teaspoon chopped ginger
1 teaspoon chopped garlic
1 onion sliced
3 + 3 tablespoons peanut oil (or other cooking oil)
1 to 2 cups cloud ear mushrooms (or other mushrooms)
1/2 teaspoon salt (optional)
2 to 3 tablespoons light regular soy sauce
2 to 3 tablespoons Shaoxing cooking wine (optional)
1 to 2 tablespoons Chinese oyster sauce

Cooking preparations:

Take off shells from prawns and devein. For cloud ear mushrooms, soak for 1 hour or overnight. Cloud ear mushrooms can be bought at Asian supermarkets or Chinese herbal stores. You can use other kinds of mushrooms if you like.

To stir fry:

Cut asparagus into 2 to 3 inch pieces. Boil water and soak asparagus for 3 to 5 minutes.
Put asparagus in a strainer. For more tender asparagus, soak with more boiled water for an additional 3 to 5 minutes.

Preheat a wok or frying pan at medium high to high heat. Add 3 tablespoons
of cooking oil. Add aromatics such as ginger, garlic and onions. Stir fry briefly and push to the side of your wok. Add prawns and sear. Add salt to taste. Stir fry all ingredients for 30 to 45 seconds. Remove ingredients and set aside in a bowl or plate.

Add remaining 3 tablespoons cooking oil to wok. Keep the heat setting on high. Add
asparagus and stir fry briefly. Add cloud ear mushrooms. Stir fry until asparagus reaches desired tenderness. Add regular light soy sauce, Shaoxing cooking wine (optional) and Chinese oyster sauce. Add back prawns and do final stir fry. Serve on a nice plate. I like to eat this dish with a bowl of hot, steaming rice. Enjoy!

    Haven't visit a Chinese restaurant for awhile. Next time when I go to one.... I'm getting some duck, and the special chow mein! Why? Because "Look at that... Look at that..." Being a frequent viewer of this channel.

    I must say that all those dishes looked good. The beef gai lan looked succulent. The prawns and egg stir fry sauce looked to have a similar texture to something they call shrimp and lobster sauce here in the states. Yeah, sorry to hear about Prime Minister Trudeau's marriage separation. I know a lot of people on the right in the US didn't like him or as I should say...didn't care for his policies. It seems most of the democratic world nowadays is divided down liberal or conservative lines.
