We finally managed to grow beets again this year! I've been making pickled beets and we've enjoyed eating them roasted too.

    Years ago my Wife and I would pickle beets. Later my Wife would heat up the beets with a butter sauce and serve them as a side. Always wonderful and one of my favorite sides. The hot beet pickling liquid would then sometimes be used to pickle boiled eggs which after cooled a little would continue to pickle in the refrigerator. The eggs were a great treat for an evening snack. Back in the 1960s and 1970s we used everything as many times as possible.
  • Your carrots remind me...when my son was a little fella, just 3 or 4, he loved watching the Looney Toon cartoons, Bugs Bunny being his favorite. He also loved carrots and once while shopping, he asked me to buy the Bugs Bunny carrots. I was confused and asked him to show me what he meant. He pointed to the carrots with their tops still on because in the cartoons, whenever Bugs ate carrots, they always had their tops on! So I peeled the carrot, leave the top on and he happily wander around the house, munching his carrot. I adore beets, regardless of the dirt flavor, but if you use plenty of butter....yummy. Hubby doesn't like them, but he does like pickled beets which I do not.

  • I LOVE beet greens and roasted veggies. My hairdresser said a couple of months ago that she wasn't going to bother planting a garden this year because it's too much work, seeing that you can just go to the farmers' market and buy what you need. Today she said that she went to the market this weekend, and was horrified at the prices the farmers charged. She said that she left without buying anything but 3 small zucchini and is sorry she didn't grow a garden. I planted more than I have in the past and I'm grateful for that wisdom. Thank you Tipper for sharing your bounty with us.

    My wife is Polish and we eat beets alot. She has a way of preparing them you might want to try ! After cooked, grate them on a coarse cheese grater (crazy messy of course!) and then put into large frying pan with a tbs of butter, tbs of sour cream, and a squeezed lemon. The lemon brightens up the colour. Mix and warm up and serve. AMAZING. Nice change from slices or cubes, and it gets rid of that "dirt" flavour Katie complains about it (my kids say the same thing !)

    I love beets! Roasted, boiled, pickled, even grated fresh sometimes. They are earthy, but lovely.
