Recipe:
BROWNIES
6.6 ounces bittersweet chocolate
1 stick unsalted butter
5.55 ounces confectioners’ sugar
2 large egg yolks
1 teaspoon kosher salt
2 teaspoon vanilla extract or paste
6 ounces all-purpose flour

FUDGE FROSTING
4 tablespoons unsalted butter
1½ cups (300g) sugar
2 tablespoons unsweetened cocoa powder
¾ cup whole milk
Generous pinch of kosher salt
1 teaspoon vanilla extract
1½ ounces unsweetened chocolate

BROWNIES: Preheat the oven to 350°F. Lightly butter the bottom and sides of a ¼ sheet pan. Line the bottom and two longer sides with a piece of parchment paper, smoothing to eliminate air bubbles. Melt chocolate and butter in a large bowl set over a double boiler, stirring often with a flexible heat-proof spatula. Remove from the heat and add the sugar, yolks, salt, and vanilla and whisk vigorously. Add the flour and fold thoroughly with the spatula until you have a homogenous dough. Spread into the prepared pan with an offset spatula in a smooth, even layer. Bake in a water bath until the brownies are set, 18 to 22 minutes. Remove from the oven and let cool completely.

    Listening to Claire explain why she likes making the Claire Recreates videos made my heart so happy. We always wanted Claire to just have a good time and not be stressed out/feel forced to make the videos she didn't want to make. Seeing it come full circle from having to routinely make gourmet versions in a work environment where all that mattered were views and making money- to now having the freedom to create the videos the way Claire wants to, without the pressure, mandatory layout, negative energy or working overtime/feeling burnt out is so wonderful. And frankly, quite badass. We love you Claire <3

    Love this! As a European who has never eaten or seen these snacks, I don't watch it for sentimental reasons - I just love watching Claire problem solve and get creative. My European wish list: Solero ice cream, Kinder eggs, Werthers originals, Daim bars.

  • This amount of difference from original product to gourmet homemade version is exactly what I’d expect. The nicer more natural chocolate colours, the natural colours of the chips, the size of the chips. It all goes to show that a human being made it, rather than a bunch of machines. Enjoying this series so much and can’t wait to see future episodes.

  • Man, I love this series. Something I'd love to see that I feel is kinda missing is getting to see other people's reactions to tasting your snacks! The camera and sound guys seem really cool so you could definitely get them and maybe even Harris to try them?! Also, not to dream too big here, but I miss Claire and Brad's ridiculous dynamic from a certain older show, and it would be such a treat to have guest assistants/taste-testers. 😂

    I remember hearing they changed the Cosmic Brownie recipe, which is supposedly why they taste different now, it's not just nostalgia. The old recipe, as I heard, used to contain honey. There's an actual recipe someone shared online, I tried when making brownies once, it was shockingly close to how I remember Cosmic Brownies; they were a little thick, but maybe my baking pan to batter ratio wasn't right. He has a lot of fast food and snack food recipes; his name is Jordan Howlett, I'm not doxxing him, that's the name he shares on his YouTube.

    I know it's always been this way, but I adore how real this video is. No overreaction, no blowing out my eardrums, no overstimulating flare, just an enjoyable watch. It gives the unexpected moments more impact, too! Like Claire totally not drilling into the countertop was that much funnier bc it was such a contrast to the rest of the video. Ugh what a team.
