Hacienda El Carmen, in Jalisco, Mexico, construction of the religious orders in 1705. During its heyday it comprised 22,000 hectares in which corn, wheat, soro, and sugar cane were produced. In 1996 it was restored by the Baeza family to turn it into a spa hotel.

The oldest records that are had of these lands, date from 1569, when they were granted to Don Francisco Merodio de Velasco. After going through several owners, doña Francisca and don Juan González, they gave the land to the order of the Discalced Carmelites in 1728, in exchange for a lifetime monthly payment.

It was then, when the Hacienda de Santa María de Miraflores was renamed El Carmen de Miraflores. The Hacienda was extremely productive, to the extent that the Carmelites were able to found the convent and the church of El Carmen de Guadalajara.

In 1837 the parents sold the property, which passed from hand to hand until 1961, the year in which it was sold to Marta Serrano Zermeño and her husband, Dr. Joaquín Baeza del Monte, who restored the main house to convert it in 2001 into a luxurious hotel and spa.
