    Years ago I thought I invented these. I'd never heard of them so maybe I'm just one of thousands of people who did invent them. :) I call them egg blobbies. If you stir in a little flour in before baking, the outer edge that touches the muffin cup has a more solid surface. Not a crust, but just a little firmer, smoother outside edge. (I think at the time I used one of the Bob's Red Mill gluten-free flours). And if you store these in the fridge in Tupperware, put wax paper between each layer of blobbies. Just cuz they sweat out water and that makes them easier to grab. I'm told they also freeze well, but they're so good I usually eat batches within days. I like to slice up cooked breakfast sausage links to put in my blobbies. It's okay to use canned or (kind of defrosted) frozen veggies instead of fresh. French cut green beans work pretty well. Spinach, too.

    Speaking of the muffin industry, "Do you know the muffin man?" Was obvious code for when someone tried to sneak in a cupcake into hotel breakfast and they knew what was coming to them.

  • The mayo topping reminds me of an April Fools prank my mom played on us as kids. She made meatloaf muffins & dye mashed potatoes green & yellow to look like frosting. 😆😆 After getting over the shock they were really delicious.

  • I'm not worried; I'm sure YSAC will continue to do the things that are creatively fulfilling and/or pay the bills, whether or not that means finishing the egg story, and either way I love that for them
